Raw vs Filtered Rosemary Honey: What Changes?
Raw honey is honey as it exists in the beehive, containing bee pollen, beeswax, and natural enzymes. It is extracted, strained, and bottled without being heated. Filtered honey, on the other hand, is heated and passed through fine filters to remove all particles, resulting in a clear, smooth liquid but often at the cost of some natural compounds. The main difference lies in the processing, which affects texture, appearance, and the final profile of the honey.
🍯 At a glance
| Feature | Raw Rosemary Honey | Filtered Rosemary Honey |
|---|---|---|
| 🐝 Process | Unheated, lightly strained to remove large debris like wax. | Heated to become liquid, then finely filtered. |
| 🎨 Appearance | Opaque, cloudy, often solid or creamy due to crystallization. | Perfectly clear, transparent, and bright golden. |
| 😋 Flavor | Complex and full-bodied, with all the subtle floral notes intact. | Milder, cleaner, and more straightforwardly sweet. |
| 🌿 Natural Goodness | Retains natural pollen, enzymes, and antioxidants. | Most pollen and beneficial compounds are removed during filtering. |
| ❄️ Crystallization | Crystallizes quickly into a fine, smooth texture. This is a natural sign of quality. | Stays liquid for much longer due to processing. |
Ultimately, the choice comes down to what you’re looking for: the full, rustic experience of honey straight from the hive, or a classic, clear liquid honey. At La Mielería, we believe the best flavor is the one nature intended.
The other day, a customer sent us an email. He wrote, “Nacho, I just opened a jar of your rosemary honey and it’s cloudy and thick… is something wrong with it?”
I just smiled as I read it. My brother Javi, who handles most of our customer service, and I get this question all the time. My answer is always the same: “That’s a beautiful thing! That means you’ve got the real deal, no tricks, no shortcuts.”
It immediately took me back to my father, Enrique, teaching me in the fields around Cocentaina that honest honey doesn’t need filters or fancy processing. So today, I want to tell you why that cloudy, rustic-looking honey isn’t just fine… it’s actually the way we’ve always preferred it in my family.
So, Why Bother Filtering Honey at All?
You might wonder, if raw is so good, why does filtered honey even exist? It’s a fair question. The big reason is appearance. For decades, supermarkets have trained us to think that honey should be a perfect, clear, golden liquid that never gets hard.
To achieve that look, large-scale producers have to heat the honey to high temperatures and then push it through very fine filters. This process removes all the tiny particles of pollen, wax, and propolis that make honey cloudy. It also slows down crystallization, which is the natural process of honey turning solid.
There’s nothing inherently “bad” about it, but something is definitely lost. It’s like the difference between fresh-squeezed orange juice with all the pulp and a carton of juice from concentrate. Both are juice, but they are not the same experience. I know which one my grandfather would have chosen.
What Exactly is Raw Rosemary Honey? Let’s Get Closer 🧐
When we talk about raw honey, we’re talking about honey in its most natural state. At La Mielería, this is what we do: we collect the frames from the hives, uncap the honeycomb, and spin it in a centrifuge to extract the honey. Then, we pass it through a simple, wide mesh to catch any big bits of wax or wood from the frame.
That’s it. No heat. No pressure. No fine filters.
What you’re left with is our artisanal Spanish honey, alive with all its natural components. In the case of our Rosemary Honey, harvested from the slopes of the Sierra de Mariola, it means you get all the tiny grains of rosemary pollen and all the enzymes the bees added. This is why it has such a rich, complex flavour and why it crystallizes into that beautiful, creamy texture. If you want to know more about its unique flavour, you can read our guide that explains What Is Rosemary Honey? Your Guide to Its Taste, Colour, and Origin.
The Filtered Side of the Story: Clear, Consistent, but…
Now, let’s look at filtered honey again. When you heat and filter honey, you get a product that is very consistent. It will look the same every time. It pours easily and won’t crystallize in your cupboard for a very long time.
For some people, especially those who use honey for baking in large quantities or prefer a very mild flavour, this might be what they want.
But here’s the thing my father always stressed: the flavor is in the imperfections. The little particles of pollen are what give Rosemary honey its characteristic delicate aroma. The natural enzymes contribute to its unique texture. By removing them, you get a simpler, more one-dimensional sweetness. You get the sweetness, but you lose the soul of the flower and the essence of the honey harvested in Spain.
My Honest Advice: What Honey Should You Choose?
So, back to the big question: raw or filtered? For me, it’s not even a choice.
If you want to taste honey the way a beekeeper tastes it—the way my family has for almost a century, since 1926—then raw honey is the only way to go. It’s not just a food; it’s an experience. It’s the taste of a specific place and a specific time of year.
Here in Valencia, we have a saying: “Qui guarda la mel, guarda la feina de l’abella.” It means, “He who protects the honey, protects the bee’s work.” This is how we see it. By keeping the honey raw and unaltered, we are honouring the incredible work of our bees. We are giving you the product exactly as they made it. All the tradition and benefits of rosemary honey are best appreciated when it’s kept in its most pure form, a topic we are very passionate about as you can see at our About us page.
When you choose raw, you get a spoonful of the mountainside, the sunshine, and the hard work of thousands of bees. All the best Rosemary Honey Benefits: Tradition, Taste, and How to Use It come from this pure, direct-from-the-hive approach.
If you are looking for a true taste of Mediterranean honey, unfiltered is the way to go. The creamy texture, the light floral aroma, the way it melts on your tongue… that’s the real magic of Rosemary honey.
