There’s a certain feeling in the air in early spring. It’s still a bit crisp, but you can smell the change coming. For my family, that smell has always meant one thing: rosemary. From Flower to Jar: How We Harvest This Artisanal Honey
Harvesting good Rosemary honey is all about location and timing. We move our hives to the slopes of the Sierra de Mariola Natural Park, a place bursting with wild rosemary. Our bees get to work in a pristine environment, far from any intensive agriculture.
This is something my grandfather taught my father, and my father taught me: you don’t make the honey, you just help the bees find the best place to do their magic.
We wait until the combs are full, then we carefully collect them. The process back at our workshop in Cocentaina is simple and honest:
- We uncap the combs by hand.
- We use a centrifuge to gently extract the honey.
- We let it rest in tanks so tiny bits of wax can float to the top.
- Then, it goes straight into the jar.
