For the bees to even consider leaving the hive to forage, the temperature must climb above 12°C. If it’s windy or cold, they stay clustered inside for warmth, and the brief, beautiful blossom is lost to us forever.

We are incredibly lucky to be based in Cocentaina, surrounded by the Sierra de Mariola and the Font Roja Natural Park. But the true secret to this honey’s quality lies in the rugged character of Alicante’s dry-farmed lands (“secano”) and the unique environment around Jijona. Here, the almond trees grow on traditional stone terraces.

As dry-farmed crops, these trees often suffer from a lack of water. If the autumn has not been rainy, a tree will barely secrete any nectar, conserving its resources against the drought. However, when the year’s rainfall is just right, this water stress works in our favor, forcing the tree to produce an incredibly concentrated nectar. The bees work this nectar cell by cell in the honeycomb, creating a honey with extremely low moisture, making it exceptionally dense and pure.
