Sometimes the most special honeys aren’t found in the blazing heat, but in the quiet, fragile moments when nature is just beginning to stir.
That’s exactly the case with Almond honey. You have to go looking for it where the flowers are still a novelty, in those chilly late-winter days. I remember my father, Enrique, always telling me that the almond blossom is a brave flower. It blooms when other plants are still sleeping, and that’s why the honey it gives us is so different. It’s not a honey you can harvest on a whim; it’s one you anticipate all winter, a reward for watching and waiting.
What Does Real Almond Honey Taste Like? 🤔
When people try our Almond honey for the first time, they’re often surprised. They expect something intensely sweet, but it’s much more complex than that.
The taste is gently sweet and incredibly smooth, but the real magic happens at the end. It leaves a very light, pleasant bitterness on your palate, almost like the taste of a raw, fresh almond. It’s a clean and elegant flavor. It’s nothing like the bold intensity of our Chestnut or Heather honeys; this one is all about subtlety.
Its aroma is just as delicate. If you close your eyes and take a deep breath, you can almost smell the almond groves in bloom—a soft, floral scent that doesn’t overpower you. The color is a beautiful light amber, another sign of its gentle character. It truly is the taste of early spring in a jar.
A Race Against Time: Harvesting Almond Honey in Spain
The almond blossom season is short and incredibly dependent on the weather. Here in Spain, the trees bloom as early as February, but if it’s too cold, too rainy, or too windy, the bees won’t leave the hive. It’s a small window of opportunity, and you have to get it right.
This is where generations of experience come in. We are fortunate because we are very close to Jijona, the main nougat town in Spain, and it is in the extensive almond groves surrounding this iconic town that we harvest our almond honey.
My grandfather taught my father, and my father taught me, how to read the weather and know exactly when to move the hives. It’s a tradition we take immense pride in. As we say here in the Valencian region, “Abella en flor, mel al cor.” It means, “When bees find abundant blossoms, the resulting high-quality honey brings joy to the heart.” Seeing our bees thrive among the pink and white almond flowers after a long winter truly does fill our hearts. At home, it’s a firm favourite. My daughters, Irene and Laia—the fifth generation!—love it simply drizzled over a bowl of fresh yogurt or on a warm slice of toast with a bit of butter. Its creamy texture makes it perfect for spreading.
It’s also wonderful in light teas where a stronger honey might take over, or paired with mild, fresh cheeses like ricotta or goat cheese.
