Sometimes we think the best honeys are found just around the corner… but that’s not always the case. For some, you have to go looking right where the flowers hide, deep in places only those who truly know the mountains can find. This is the story of our Heather Honey.
Every year, as summer fades, we begin a special journey. It’s a tradition my father, Enrique, taught me, involving long travels hundreds of kilometers from our home to the high peaks of Soria and Palencia. We know that truly exceptional Heather Honey doesn’t just wait around. You have to go out and get it, right from the source.
Our Local Sanctuary: The Sierra de Aitana
But there is another mountain that holds a special place in my heart, one much closer to home: the Sierra de Aitana. As the highest peak in our province of Alicante (1,558 meters), it’s a place I know intimately. I’ve hiked its trails countless times, and I love taking my daughters, Irene and Laia, there to see the first snows of the year.
The journey of our hives from the Cocentaina valley to the slopes of Aitana is a vertical ascent. Here, the agricultural landscape gives way to rugged nature, dominated by bare rock and alpine scrub.
Our bees forage in an environment defined by iconic spots. Hives are placed near mountain villages like Confrides, Alcoleja, and Benifato. The bees find water in ravines like Barranc de l’Arraix and high-altitude springs like Font de la Forata, keeping them hydrated on their mission. Their apiary overlooks the spectacular rock arches of Els Arcets and the deep chasms of Simas de Partagat.
The climate in Aitana shatters the stereotype of a warm, dry Alicante. Above 1,000 meters, it becomes a high-altitude Mediterranean climate, with harsh winters where snow is common and cool, breezy summers. This allows the soil to retain spring moisture, ensuring the heather thrives.
