Our base and main apiary are here in Cocentaina, nestled at the foot of the Sierra de Mariola Natural Park. As you can imagine, the winters up here are harsh, and the flora is more suited to the mountains—rosemary and thyme. That’s why, to get this jewel that is carob honey—which is now taking Europe by storm as the healthy, caffeine-free alternative to chocolate—we have to practice transhumance.
As soon as summer ends, we load up the trucks and move the hives down towards the warmth of the Valencian coast and pre-coastal areas. We are chasing the bloom of the carob tree, which needs mild winters and flees from frost like the plague.
Our Journey for the Perfect Blossom
The main journey takes us north, seeking the specific thermal climate and fiercely dry lands of the Hoya de Buñol and Camp de Túria regions. We take the hives to towns like Chiva, Turís, or Pedralba, where the ground is pure stone but the carob trees are ancient and gigantic. We also stretch the map to Baix Maestrat and Plana Baixa, placing hives in Càlig, Traiguera, or up the ravines of La Vall d’Uixó.
The sun in these areas and the scarcity of summer rain make the trees suffer just a little—enough to concentrate a phenomenal nectar, loaded with sugars and antioxidants. This is what gives the honey its dark, almost black color and that roasted aftertaste that reminds you of pure cocoa.
We don’t forget the south either; since we are right next to the Marina Alta, we take advantage of the sheltered, sunny valleys of Pego and Benissa, where sea breezes keep the temperature just right and the bees work like crazy in the middle of autumn.
It’s a grueling effort of trucking, sleepless nights sealing hive entrances, and moving entire apiaries. But seeing the bees draw out the wax and fill the honey supers with that dense, aromatic nectar in regions like La Costera or Montserrat makes it all worthwhile. It reminds me of a saying we have here: “Abella en flor, mel al cor.” It means, “A bee on a flower, honey in the heart.” When the bees find such wonderful blossoms, the honey they produce brings a deep joy.
