When I explain this to people, they’re often surprised. Most honey comes from nectar, that sweet liquid inside flowers. But Forest Honey is different. It starts with sap from trees like holm oaks, cork oaks, or pines. Small insects, like aphids, drink this sap and then excrete a sweet, sugary liquid we call honeydew.
Our bees, being the incredibly smart and resourceful creatures they are, find this honeydew on the leaves and bark of the trees and gather it just like they would nectar. They take it back to the hive and work their magic on it, creating a completely different kind of honey.
It has nothing to do with flowers. This is why its taste and composition are so unique. It’s a product born from a three-way partnership: the tree, the insect, and our beloved bees. This is what makes it a genuine product of the Spanish forest.
