I get this question a lot, especially from people who are used to lighter honeys like Orange Blossom or Rosemary. They open a jar of our Carob honey and are surprised by its deep, almost mysterious color and thick consistency. I always smile and tell them the same thing my father, Enrique, taught me: “The color of a honey tells the story of the flower it came from.”
And the story of Carob honey is a special one. It’s not a honey for the faint of heart; it’s bold, it’s different, and it tastes of the very land it comes from. For us at La Mielería, it’s a direct connection to the landscapes of our home here in the Spanish Mediterranean. To produce a truly authentic honey of Spanish origin, you have to understand and respect these unique blossoms.
Why is Carob Honey a True Taste of the Mediterranean?
As beekeepers, our year is marked by strategic journeys guided by the blooms. My grandfather traveled these same mountains searching for the best flowering, and we continue that tradition today.
The journey for Carob honey involves moving our hives from the valleys of Cocentaina to the stunning natural amphitheater of the Circ de la Safor in Villalonga. This transition is a world of difference for the bees, plunging them into a unique microclimate where the low mountains meet the Mediterranean sea breeze.
Leaving the slopes of Montcabrer behind, we cross a rugged natural frontier. The hives are placed at the base or on the slopes of the Serra de la Safor, a limestone giant that reaches nearly 1,000 meters just a short distance from the coast.
Here, the landscape is deeply shaped by its geography. Our bees forage near villages with deep agricultural roots like L’Orxa, Potries, and Ador. They explore ravines and gorges carved by water, like the Barranc de la Safor and the impressive Riu Serpis canyon, which act as natural corridors of temperature and humidity. From their perches, the hives watch over the majestic Finestra de la Safor (a spectacular natural rock window) and the historic Font de la Reprimala, a cool spring where vegetation thrives.
A Microclimate Forged by Mountains and Sea
This area has a unique climate. The mountain ranges (Mustalla, Safor, and Grossa) block the moist easterly winds from the sea, making it one of the rainiest spots in the entire Valencian Community.
The Circ de la Safor itself acts like a great north-facing amphitheater, creating a huge diversity of micro-environments. Its shady areas and ravines retain constant moisture, perfect for plant growth, while the sunny limestone slopes store daytime heat, softening the night frosts. This thermal balance prevents the soil from drying out too much toward the end of summer.
This is what makes our Carob honey so special:
A late autumn bloom: While the fields in Cocentaina are growing quiet with the coming cold, the sheltered slopes of the Circ see the carob trees burst into bloom between September and October. This is a lifeline of nectar and pollen for the hives, allowing them to stock up for winter.
Optimal humidity: The moisture from the sea winds and ravines prevents the nectar in the carob flower from evaporating. This allows our bees to easily collect it throughout the day.
Exceptional purity: By placing our hives in these mountain areas, far from the intensive citrus groves on the coast, we obtain an exceptionally pure monofloral Carob honey.
My grandfather used to say that every jar of honey holds the soul of a place. For Carob honey, that soul is purely Mediterranean, wild, and incredibly distinctive.
From Blossom to Jar: A Family Tradition Since 1926
Harvesting Carob honey is one of the last big jobs of the season before the bees settle in for the winter. The process is the same one my family has used since 1926: with care, respect, and absolutely no shortcuts.
We collect the honeycomb frames only when they are perfectly ripe. Back at our workshop, we uncap them and extract the honey using centrifugation, a gentle process that keeps all its natural qualities intact. We don’t heat it, we don’t pasteurize it, and we certainly don’t add anything to it. It’s poured straight into the jar, just as the bees made it.
There’s an old Valencian saying we live by in our family: “Rusc net, mel ben dolç.” In English, it means, “A clean hive makes for sweet honey.” It’s a simple reminder that the quality of the final product starts with how well you care for your bees and their home. This philosophy guides everything we do, from the fields to the moment my brother Javi and his team carefully pack your order. How Do You Use Carob Honey in Your Kitchen? 🤔
