Some people inherit land.

I inherited kilometers of road.

Ever since I was a boy, I watched my father, Enrique, prepare for impossible journeys, following the same path my grandfather had started years before. While others looked at maps to find cities, we looked at them to find flowers.

I especially remember the trips to the Serranía de Ronda. Hours on the road to reach mountains covered in vegetation where our bees found true treasures.

Because in beekeeping, there’s a truth that never changes: extraordinary honey rarely appears by chance.

And Chestnut honey is probably one of the best examples. You have to go out and get it, taking our bees to the dense chestnut groves of southern Spain where they can work their magic.

The Journey to the Chestnut Groves: Our Andalusian Sanctuaries

Moving our hives from Cocentaina in Alicante to these two Andalusian enclaves is a transhumance of precision. We trade the dry Alicante landscape for lush mountain groves tinged with ochre and green, where a unique Atlantic-Mediterranean climate sets the rules. This is how our chestnut campaign unfolds in two remarkable areas:

The Serranía de Ronda: The Genal Valley

Leaving Alicante to enter the Genal Valley, in the heart of the Serranía de Ronda, is like discovering a postcard landscape. Here, chestnut groves cover entire slopes that cascade down to crystal-clear rivers. Our bees forage in an abrupt and spectacular environment:

  • Surrounding Villages: The hives are distributed near small white villages clinging to the rocks, such as Pujerra, Igualeja (where the Genal river is born), Cartajima, Júzcar, or Faraján.
  • Gorges and Rivers: Their work is concentrated in the deep gorges of the Genal River, the Barranco de la Tocha, and the Barranco de la Canal. These ravines trap the fresh air masses the trees need.
  • Iconic Sites: Our apiaries are positioned near the spectacular source of the Genal River or hidden on the slopes beneath the limestone cliffs of the Sierra de Jarastepar, sheltered from the dry inland winds.

The Sierra de Aracena and Picos de Aroche

When we move the hives to the western edge of Andalusia, in Huelva, the landscape changes. The Sierra de Aracena offers gentler terrain but a continuous forest of centuries-old chestnut trees introduced during the Reconquista. The Huelva environment is notable for:

  • Surrounding Villages: The bees forage in the areas around Fuenteheridos (the heart of the chestnut forest), Galaroza, Castaño del Robledo, Alájar, and Aracena itself.
  • Valleys and Ravines: The beekeeping activity thrives in the Múrtigas River Valley and the humid ravines that descend towards the Barranco de la Fuente del Rey.
  • Iconic Sites: The hives are placed near magical spots like the Peña de Arias Montano in Alájar or in the shady groves surrounding Castaño del Robledo, the highest village in the sierra.

A ‘Humid Oasis’ and a Double Harvest

For our bees, the chestnut tree (Castanea sativa) offers a double feast in early summer (June and July), a time when the fields back in Cocentaina are already beginning to dry up from the heat. This is made possible by a special combination of factors:

  • The Double Harvest: Unlike other blooms, the chestnut is generous twice over. First, the bees collect nectar from the long flowers (the catkins). Then, as the heat intensifies in July, they gather **honeydew**, sweet droplets that the tree itself exudes through its leaves and fruits. This enriches the honey with minerals and unique properties.
  • The Role of Morning Mists: In both the Genal Valley and Fuenteheridos, the morning mists and ravine humidity prevent the nectar and honeydew from drying out. This allows the bees to work comfortably from the early hours before the Andalusian sun gains strength.
  • Optimal Soils: Unlike the limestone soils of our home in Cocentaina, Ronda (with its peridotite and schist zones) and Aracena have the acidic, decalcified soils where chestnut trees thrive, pumping essential nutrients that end up in the hive.
