Our Pine Honeydew (traditionally known as pine honey) is one of the most unique and exclusive gems of mountain beekeeping. It does not come from floral nectar, but from the rich honeydews that our bees collect at the end of summer in the majestic pine forests of the mountains. The result is a product with an unmistakable sensory strength, designed to captivate lovers of pure, raw beekeeping.

Sensorial Characteristics

Visually, it is striking for its very dark and dense amber colour, displaying subtle and elegant greenish reflections when viewed against the light. Its aromatic profile is markedly resinous, woody and malty, directly evoking the purity of the humid forest. On the palate, it offers an intense, mature and fruity flavour with toasted notes that will win you over from the very first spoonful.

• Harvest and Collection: Late summer (September), the ideal moment when the hives complete the gathering of conifer honeydews.

Technical Guide for Use and Conservation

To preserve the extraordinary organoleptic, nutritional and natural enzymatic qualities of this raw honeydew, we recommend following these professional storage guidelines:

• Storage Temperature: Keep preferably in a cool place between 15 °C and 25 °C (do not exceed 27 °C to avoid degradation of its natural sugars).
• Humidity and Sealing: Always store in its original glass container, tightly sealed after each use. Ambient relative humidity must be below 60% to prevent surface alterations.
• Light Protection: Store in a pantry or dark place, minimising exposure to direct sunlight and UV light to avoid oxidation of its natural compounds.
• Hygienic Handling: Always use clean, completely dry wooden, glass or metal utensils when serving the product.

• Best Before: 2 years from the packaging date, maintaining optimal pantry conditions.
• Natural Crystallisation: Due to its high fructose content and low glucose percentage, this honeydew crystallises extremely slowly and may remain liquid for long periods. Any change in texture or settling is a natural physical process of raw honey and does not affect its quality in any way.
• Allergens: Pure single-ingredient product. Contains no gluten, lactose or declarable allergens.
• Child Safety Warning: Not recommended for children under 1 year of age.
