Characteristics of Holm Oak Honey:

• Appearance: Extremely dark amber colour, almost black, dense, with greenish or mahogany reflections when held to the light.
• Aroma: Floral, markedly malty, persistent and intense, evoking the scent of the forest in autumn.
• Taste: An exceptional balance; markedly sweet but crowned with a clear and elegant salty note that counteracts palate saturation.
• Texture and Crystallisation: Due to its high natural fructose content and low glucose percentage, it has a dense liquid consistency that remains fluid for very long periods, showing an extremely slow and rare tendency to crystallise.
• Harvest Origin: Carefully collected between the end of summer and the beginning of autumn in mountain areas (between 600 and 1,800 metres of altitude) with ideal ambient humidity.
