Our raw Carob Honey from La Mielería is a monofloral autumn gem, artisanally harvested in our mountain apiary sites, where the majestic carob trees (Ceratonia siliqua) blossom. Obtained directly from the honeycombs by cold extraction and not subjected to any pasteurisation or industrial microfiltration process, we guarantee an intact raw honey that preserves all its enzymes, natural pollen and the pure properties of the hive. Not recommended for children under 1 year of age.

It is a highly complex and unique honey, greatly valued by traditional consumers who appreciate sensory profiles with character and body, far removed from common industrial sweeteners.

True Sensory Characteristics (Monofloral Profile):

• Appearance: It has a very characteristic dark amber colour in its liquid state. As it undergoes its natural physical crystallisation process (which occurs at a medium-fast rate), it develops a compact brown tone with elegant greyish nuances.
• Aroma: Intense and markedly floral, with very distinctive malty notes reminiscent of malt, toasted cereals and autumn nuts.
• Taste: Surprising and balanced on the palate. It combines a noble initial sweetness with subtle slightly salty finishing notes and a very elegant bitter base, characteristic of the nectar of this tree species.
• Texture: Fluid after extraction, it naturally evolves into a dense, crystallised consistency, which confirms the absence of heat overprocessing in our workshop.

• Gourmet pairing: Exceptional when combined with a drizzle of extra virgin olive oil (EVOO) on toasted artisan bread.
• Dairy & breakfasts: Adds a unique aromatic dimension when mixed into natural yoghurt, artisan kefir, cereal porridge or oat bowls.
• After-meal infusions: Ideal as a natural sweetener for traditional hot infusions such as aniseed, chamomile, fennel or pennyroyal (it is recommended to add it when the liquid is lukewarm to preserve its biological qualities).

Presentation and Technical Storage:

• Home storage: Keep the container closed in a cool, dry place, protected from direct sunlight.
• Crystallisation note: If you prefer to enjoy its original liquid state, you may place the jar in a bain-marie over very low heat (not exceeding 40 °C). Avoid using a microwave oven completely to prevent degradation of its natural properties.
