Characteristics of Forest Honey:

• Botanical Origin: Produced from honeydew of Quercus (holm oaks, oaks) and wild nectar.
• Sensory Profile: Dark amber to very dark colour. It has a floral aroma with a marked malty component, intense and persistent.
• Flavour: Less sweet than nectar honeys, with salty notes and a very characteristic resinous aftertaste.
• Crystallisation: Very slow or non-existent, remaining fluid for a long time due to its high concentration of honeydew.
• Harvest: Harvested in late summer and early autumn in the main mountain ranges of the Iberian Peninsula.
