Raw Almond Blossom Honey: The Pristine Delicacy of Spring
Our Almond Blossom Honey is one of the most subtle and fascinating monofloral varieties of the season. It is obtained from the nectar of almond tree flowers (Prunus dulcis), one of the first trees to awaken after winter. Its flowering, which occurs between January and April depending on the climate of each region, offers an ephemeral spectacle of just two weeks. In this brief period, our bees hurriedly collect this precious nectar and pollen, giving life to a raw honey with an elegant, traditional and extremely balanced profile.
Real Sensory Characteristics (Monofloral Profile):
Visual: It naturally presents a very light amber colour, which can exhibit subtle golden highlights in liquid state. When it crystallises, it adopts a very homogeneous whitish or cream tone.
Aroma: Floral and markedly fruity, of medium intensity, with a perceptive and persistent component that directly evokes the smell of raw almond from the field.
Flavour: Predominantly sweet and delicate, masterfully balanced with light and characteristic bitter notes at the end of the palate, whose intensity varies according to the variety of the fruit tree foraged.
Texture and Crystallisation: Fluid immediately after cold extraction, it experiences over time a moderate-speed crystallisation that organises into very fine crystals, offering an excellent creamy consistency for spreading.

Harvest and Origin Details:
Harvest: First months of spring (March-April), subject to the absence of late frosts that may affect early flowering.
Production Areas: Traditional and sustainably cultivated fields distributed across Aragón, the Balearic Islands, Catalonia, as well as the central, eastern and southern slopes of the Iberian Peninsula.

Thanks to its soft and rounded aromatic profile, it is one of the most versatile culinary varieties from our workshop:
Fine Sweetener: Ideal for cleanly sweetening herbal teas, coffees or cold drinks without masking their original flavour.
Creative Cooking: Combines perfectly in the preparation of oil-based sauces, dressings and vinaigrettes for salads, as well as to accompany semi-cured or fresh cheese boards.
Traditional Baking: It is the ideal ingredient for homemade candied nuts and baked desserts. Due to its smoothness, it is also highly valued in the preparation of artisanal natural cosmetics.

Technical Guide for Storage and Quality:
Storage: Keep at room temperature in a cool, dry place, fully protected from direct sunlight.
Natural Evolution: Due to its absolute purity and the absence of industrial thermal pasteurisation, the honey tends to solidify in cold conditions. If you prefer it liquid, simply warm the jar slowly in a bain-marie (without exceeding 40 °C). This superficial physical change does not alter its nutritional properties at all.
Shelf Life: 2 years from the date of packaging under optimal sealing conditions.
Allergens: Pure single-ingredient product. Does not contain any declarable allergens.
